recent eats from my [i]phone

Hi, everyone!!

This is going to be a short post of my recent eats stored in my iPhone. A lot of them are taken with instagram, but not all. I do have some pictures from my Digital Camera as well, but unfortunately my adapter is somewhere deep in the luggage, meaning it’s quite impossible for me to dig it out right now.

Aduki Mochi (My recipe)!

Although I made this twice before, this was the first time my mom got to try it. She was like “Oh my goooddd, this is so ggooodd!” You better try it too!

giant asian/korean pear size of my head!!! soo good

Basmati brown rice + Red lentil dahl. Definitely went for seconds. I ended up eating like 3 cups of rice…basmati is soo good (and healthy!)

gigantic kale salad with like 4 cups of raw kale, 4 oz tempeh, lots of bbq sauce, spices

post-kale salad: rice cakes with cocoa-bean dip X3 (rice cakes never stop…wtvr that means)

I love how instagram makes even messy foods look pretty…imho

3 oz dry wild rice pasta with a zucchini, tomato, basil, oregano, spices, nutritional yeast added later

I munched on some more rice cakes after this (I had a good work out today = carb re-load) and then had this chia pudding.

2 tbsp chia seeds with 1/4 cup of cocoa powder (bad chocie) and alcohol-free vanilla

I mentioned before that I quit coffee and dramatically reduced my intake of stimulants like chocolate since going vegan. Because we’re leaving canada soon, I wanted to finish off some cocoa powder I had in the cupboard. I made a pudding with 1/4 cup of especially-dark cocoa powder, and I think it was a bad choice. Not only that it was like 8 o’clock when I ate this (not easy falling aslee), but I also had (still have) a sharp headache-y feeling after finishing this. I can’t say if it was the super carb-loading or this chocolate, but either way, it wasn’t the best feeling I’ve had today.

Which by the way, I had a killer workout today (like I mentioned above)! I wasn’t able to have some good cardio in the last few days due to packing, and moving; today I did 20 minutes of elliptical, and 30 minutes of intervals – running and walking. I did some squats afterwards and stretched it out. Whoa! Hope I feel okay tomorrow! Well, I’m sure all those rice and chia would help me recover overnight πŸ˜‰

OK, before it gets any wordier, I’m going to go watch some more youtube and chill. I’ve been ‘chilling’ way too much recently I feel kind of bad. I guess I better rest while I can…
