We’re opening a Fruit Store!!

…or not…

haha, That’s what my mom said when she came back from a road trip with my dad on Thursday.
They’ve been away for 2 days for a overnight trip at the lower parts of South Korea, exploring a potential hometown in their future.

The thing is, while they were away, I bought few things from the market, such as a package of grapes and a small box of peaches. When they were back, they brought SOO MUCH FRUIT back!

1 large box of white peaches

1 large box of yellow peaches

1 box of figs

1 large of of gigantic Asian pears

1 large box of kiwi fruit (this was actually ordered online)

and things I bought: 1 small box of white peaches, 1 container of grapes!!!

They also brought back:

1 box of sweet potatoes

1 bag of sweet potatoes ( + another bag that I bought)

2 kabocha squashes…

 

OMG

Our house is so full of food right now. The pictures don’t show it all…1) because our fridge is too messy to show the whole situation

2) My family and I already devoured a few of the fruits. 3) My parents actually bought another larger box of figs, but they gave it to my uncle’s family. Thank God.

OK, so that was a really random post (with crappy pictures) of me rambling about how I’m being squished between fruit! It’s true I love fruit, but seriously…this is too much!!

Grateful of what I have.

Sorry for lack of posts recently!! I’ve been a little lazy, and have also been busy hanging out with my friend, visiting families, and etc…

Before I share the photos, while I was uploading them, I thought to myself this: Wow, I am such a fortunate person.

I mean, there are millions, or billions of people out there that do not get half of what I eat/get/buy daily. Even today, for example, I went shopping for “foreign foods” and baked twice in the afternoon. I wonder how many other can do whatever they want to do, like me, and enjoy their favorite foods as much as I do. I feel so grateful of what I have.

There’s more. If I was to stay in Korea, I’m supposed to still be in Grade 12, getting ready for the “Final Exam (Korean SAT)” in November. I should be sleeping 5 hours a day, studying ALL DAY LONG except for meal time. On the contrary, I’m soooo chill, and I feel so thankful of it (but of course, from september, it will be just as bad).

Cornmeal Quinoa Muffins

Funny happening: I was short for one Muffin Liner, so I had to use the pink paper cup for the last muffin. It turns out one of the other muffin had 2 Muffin Liners… Anyways, the recipe is from My New Roots, modified by using white quinoa, korean red pepper, and a variety of Korean mint leaves. SOO GOOD & super nutritious with all those chia!!

made using dates (which I got from Foreign Foods Mart in Itaewon, thanks Mipa!), aduki beans, cocoa powder (from High Street Market), vanilla. Based on a recipe on the Copycat Cook.

gluten free, vegan Lemon Drops!! TOTALLY WORTH THE PRICE!

IT IS SOOOO GOOD. I recommend you eat this as a very last bite of the meal, cuz otherwise you won’t like the next bite of anything else. This is from High Street Market, but you can check out Alien’s Day Out Bakeshop online!

I also got hummus today = Canadian style lunch, with a giant (about 300g from guessing) Korean CHESTNUT sweet potato, veggies…(the lettuce is from my grandma’s garden!)

Various snacking occured between lunch and dinner today: the Aduki brownie, Lemon Drops, etc….

dinner: another giant sweet potato, whole package of Perilla Leaves (wild sesame), the other half red pepper, dried daikon banchan with gochujang, natto

dessert: more brownie, cornmeal muffin, (and unpictured – more sweet potato)

In next post, I’m thinking about writing a more serious matter: getting ready for uni. My anxiety level is rising daily and even though I feel excited at the moment, I’m just as nervous and scared…Whew…calm down, Steph. You can do this!!

Just one month left…

Until I head to Toronto!! OMG I am so excited.

In one month, I’ll be a university student studying Life Sciences in UofT. I feel ecstatic, and at the same time, very nervous. I sincerely wish that I’ll do well in my first year so that I can major in the subject that I am truly passionate about. It will be difficult I know, and very competitive as well. But deep in my heart somewhere, I know that I can do this. I sense the presence of confidence in there.

Anyway, my part time work has finished as of yesterday, and from today I’ll be reviewing some of the past Biology curriculum, which I have been forgetting. Before that, I decided to pop into my blog and ‘release’ some of the Korean vegan foodie pictures I had in my iPhone and Camera!

the Instant coffee that I’ve been drinking…all gone; which means I’m back to QUIT-mode.

I actually quit coffee few months ago, but lately I could not resist the smell of my coworker’s coffee. I bought a small pack of instant coffee (10 small portions) and finished it. I could definitely notice the ill effects of coffee though; which means I am going to try quitting again.

I’ve been eating lots of fruit: Korean fruits are THE best.

Been LOVING Korean STARCHY corns…this one’s purple

Korean corns are very starchy & sticky. Apparently it’s due to the fact that the content of amylopectin is greater in these glutinous varieties (same goes with glutinous rice). Amylopectin isn’t recommended for people with diabetes as it is too easily digested (aka. faster to enter bloodstream) but for someone like me who has a bad digestion to begin with, the glutinous varieties of rice and corn are more recommended.

I had another starchy corn (but yellow one) for dessert after this. Haha. GIVE ME THE CARBS!!!

A meal I prepared for the family!

I made Kabocha Squash, Millet & Corn pilaf, which I’ve made for my mom once before. You can check out the recipe somewhere on my Pinterest board 😉 It’s not supposed to look so “SOUPY” like that, but it’s because Korean millet is much more stickier than the millet you get in Canada. Koreans just LOVE sticky foods….(glutinous rice, starchy corn, glutinous barley, glutinous millet, extra starchy potatoes…etc.)

 

Sometimes I just enjoy rice for nighttime snack…

The above rice was actually cooked with a variety of mushrooms, vegetables like carrots and burdock, and tiny seaweed strips. It’s really good with a touch of herbamere or soy sauce.

 

Guess what this is?

Yesterday, my mom made something really special. This is “Mushroom Pyeon-Yook,” which is sort of like a substitute for Fatty meat-cuts that koreans like to eat. The recipe was from a Temple-Cuisine cookbook that my mom bought last week. (BTW, I wish those books were in English too, because it’s full of healthful, delicious eats!) It’s made first by getting the moisture out of a variety of mushrooms by lightly stir-frying it, and then by mixing with Agar-Agar solution which have been already prepared. After few hours in the fridge, it becomes a super nutritious, healthful, and delicious jelly!

3 types of mushrooms were used, as well as chestnuts!

My mom ate only 4 pieces from the above plate,which means last night, the rest was…for me 😉 It’s great with Gochu-Jang sauce and Greens.
